Every village, every culture is rooted to traditions that sometimes is also transmit  in its gastronomy. Depending on the festivity or the time of the year the people cook different dishes. And in Lanzarote we find this tradition at Christmas. Every year the houses are filled with a sweet smell: to truchas de batata.  

It is a typically sweet potato turnover that depending on the house people add different kind of ingredients to give a characteristic flavour. Even in some houses make their own dough. It makes that the family meet to help in the process, so this traditions causes that during this festivity the family get together frequently. 

We invite you, if you stay in the island at Christmas, to taste this delicious sweet. Although there are not only truchas of sweet potato, you will also find with pumpkin or spaghetti squash jam.

Today we want to share with you the recipe of the most traditional stuff. So you could have a bit of Lanzarote with you and we encourage you to cook it at home. Take note.  

Truchas de batata or Sweet potato turnover

Ingredients:

1 sweet potato

1 cinnamon stick 

Aniseedes 

A pinch of salt

Orange juice 

Zest from 1 lemon and 1 orange

4 tablespoons of sugar

Powdered cinnamon 

Chopped almonds

Raisins

Small turnovers

 

First, we take the turnovers out of the fridge. 

We put some water in a cooking pot. We peel the sweet potatoes, we cut it and put it into the cooking pot with the cinnamon stick, the aniseedes and a pinch of salt. Once the sweet potato is cooked, we mash it and put it into a bowl. 

We take the almonds and toast them in a frying pan. Then we mixed the almonds in the bowl with the orange juice, zest from lemon and orange, sugar (can be substituted for sweetener), powdered cinnamon and raisins. We mix everything well and we will have our filling ready.

We separate the small turnovers and put the filling. Do not fill them up too much or they will overflow. To close them well, wet the fingertips with water and pass it along the edge, close it and seal it well with a fork.

We heat oil in a frying pan, fry them (take care not to burn them) and put them on a plate with napkins to drain the excess oil. Sprinkle with a little sugar on top and we will have them ready.

We are sure they will not be a long time on the plate. It is a really Christmas delicacy. Take your apron and go to the kitchen!
